Pork ears are composed of skin, fat, and a core of flexible, edible cartilage. In Indian culinary traditions—particularly in tribal Naga and Mizo cuisines—pork ears are first scorched clean of stray hairs, boiled, and sometimes smoked to achieve a distinct earthy, rustic flavor. They are frequently sliced thin and simmered into spicy village-style stews, tossed into dry stir-fries with fermented bamboo shoots (axone) and wild chilies, or made into savory curries. They are also widely sold as dehydrated or roasted chews for pets due to their high collagen and glucosamine content.
