Rogan Josh is one of the crown jewels of Kashmiri cuisine. Traditionally made with tender mutton, it is slow-cooked in a base of yogurt, onions, and Kashmiri red chilli powder, which gives the dish its signature deep red colour without excessive heat. Infused with warming spices like cardamom, cinnamon, and cloves, this curry is rich, aromatic, and comforting. Best enjoyed with steamed rice or naan, itโs a dish that embodies the essence of Kashmiri culinary heritage.
Ingredients
- 1 kg mutton pieces (bone-in preferred)
- 2 onions, finely sliced
- 1 cup yogurt, whisked
- 2 tbsp Kashmiri red chilli powder
- 1 tsp turmeric powder
- 2 tsp fennel powder
- 1 tsp ginger powder
- 4 cloves garlic, minced
- 2 green cardamoms
- 2 black cardamoms
- 1 cinnamon stick
- 3 cloves
- 3 tbsp mustard oil or ghee
- Salt to taste
Method
- 1 Heat mustard oil or ghee in a heavy-bottomed pot until smoking, then cool slightly.
- 2 Add cardamoms, cinnamon, and cloves; sautรฉ until fragrant.
- 3 Add onions and cook until golden brown.
- 4 Stir in garlic, ginger powder, turmeric, fennel powder, and Kashmiri chilli powder.
- 5 Add mutton pieces and sear until browned.
- 6 Stir in whisked yogurt gradually, mixing well to avoid curdling.
- 7 Add 2 cups water, cover, and simmer on low heat for 45โ60 minutes until the
- 8 mutton is tender.
- 9 Adjust salt and serve hot with steamed rice or naan.
- 10 CHEF TIP: Use Kashmiri red chilli powder โ it imparts vibrant colour and mild heat, which is key to authentic Rogan Josh.

Mutton pieces are first seared, then simmered gently with onions, tomatoes, ginger, garlic, and a blend of spices. The long cooking time allows the meat to become tender while the curry develops a deep, aromatic richness. Served with rice or naan, itโs a comforting dish perfect for family meals.
Ingredients
- 1 kg mutton pieces (bone-in preferred)

- 4 cloves garlic, minced
- 1 tbsp ginger paste
- 2 green chillies, slit
- 2 tsp garam masala
- 1 tsp turmeric powder
- 2 tsp coriander powder
- 1 tsp cumin powder
- 2 tbsp oil or ghee
- 1 cup yogurt
- 2 cups water or stock
- Salt to taste
- Fresh coriander leaves for garnish
Method
- 1 Heat oil or ghee in a heavy-bottomed pot.
- 2 Sear the mutton pieces until browned, then set aside.
- 3 In the same pot, sautรฉ onions until golden brown.
- 4 Add garlic, ginger, and green chillies; cook for 1โ2 minutes.
- 5 Stir in tomatoes and cook until soft and pulpy.
- 6 Add turmeric, coriander, cumin, and salt; mix well.
- 7 Return the mutton to the pot, add yogurt, and stir to coat.
- 8 Pour in water or stock, cover, and simmer on low heat for 1.5โ2 hours until the
- 9 mutton is tender.
- 10 Sprinkle garam masala, garnish with coriander leaves, and serve hot.
- 11 CHEF TIP: Use bone-in mutton for maximum flavour โ the slow cooking extracts richness from the bones into the curry.
