The Chicken Beancurd Roll (sometimes translated as Ji Rou Xian Zhu Juan) is a labor-of-love delicacy commonly found in Singaporean dim sum restaurants and local hawker centers.
The Filling: The stuffing consists of finely ground or minced chicken, mixed with chopped shiitake mushrooms, carrots, water chestnuts, and sometimes wood ear mushrooms for an extra layer of crunch and texture. The mixture is heavily seasoned with soy sauce, sesame oil, garlic, and five-spice powder.
The Wrapper: The filling is rolled tightly into a cylindrical log using thin, dried bean curd sheets (tofu skin) derived from boiled soy milk.
Preparation Method: These rolls are traditionally shallow-fried until the exterior becomes wonderfully crispy, golden, and slightly bubbly. Afterward, they are often briefly steamed or braised in a flavorful, umami garlic or oyster sauce, which softens the beancurd skin just enough so it absorbs all the rich flavors.
Often served alongside sweet chili, ginger sauce, or a tangy chili ketchup, they make an ideal snack, appetizer, or comforting main course when paired with steamed rice or noodles.
